Sweet Supper

Oh sweet potato, I’ve missed you!

I go through sweet potato phases but I can’t remember the last time I ate one.

Supper was salsa chicken with a baked sweet tater and a salad with yellow pepper, red onion and some nectarine chunks.  Balsamic vinegar made it a bit more exciting.

I have to admit that I’m a fan of America’s Next Top Model and a friend will be here soon to watch the premiere.  I really don’t know why I follow the show because it’s so ridiculous and doesn’t do much for some girls’ self esteem, but it can be some entertaining television.

    How do you cook the sweet potato and for how long? In the oven or microwave?

    I haven’t watched ANTM for many seasons now, and generally mock the whole thing, especially Tyra’s over-dramatic style, but then I have to confess I do occasionally tune in to the “Janice Dickenson modelling agency” for pure entertainment and shock value :S.

    Hi LWB :) I do it in the oven at about 350 for half hour to 45 minutes… all depends on the tater! I’ve done it in the microwave too but it always ends up pretty mushy…. I’d check it after 5 minutes and then keep adding minutes and make sure it’s not exploding.

    Oh Janice Dickenson! I’ve watched her show too!! Glad I’m not the only one who has that guiltly pleasure :)
