It’s Good Friday – and it’s been a good Friday indeed. Our home church “service” was great… something different than I’m used to experiencing for an Easter weekend, but I enjoyed it. And it incorporated food – obviously I would love it! And gluten-free food, might I add!
Before my sister and I headed there, we had a yummers breakfast.
Scrambled eggs with green onions + parsley, oranges and cinnamon raisin GF toast (thanks mom, it’s actually good!). Two days in a row without oatmeal? The insanity.

Cacti for Lunch
We had lunch downtown at the Blue Cactus. I went there for my birthday a couple years ago and it was terrible – today, much better than terrible.
I ordered the herb + lime marinated chicken with rice and chef salad.
The chicken had a pineapple salsa on top – not too sweet, just right.
The dressing was a spicy thai concotion – a little on the spicy side for my tongue.
I cleaned this plate – not a speck left! I’d say the Cactus has redeemed itself.
I munched on some sugar-free candy as we were wandering through the market. We’re laying low this afternoon and then busting out the bar-b for the first time this year! Yes!! Pork tenderloin on the menu… stay tuned!

Last time I went to the Blue Cactus, I was also pretty disappointed, so it is good to hear that they’ve redeemed themselves
first BBQ of the year, so exciting! Our BBQ is at the cottage (since we live there may-oct) so no BBQing for a few more weeks at my house

Mmm both spread there look equally appetizing. There’s something about those simple scrambled eggs that has me a’cravin.

We have word of possibly SIXTY DEGREES here in Minnesota today, so not only will I be BBQing (vegetables, of course!) but I might even go crazy and bust out the flip flops too.
Yes I’ll have to keep an eye out for it — I know the bigger Loblaws will carry it. I’m yet to try the loaf from Grain Harvest but it looks pretty good!
