Over Muffined

I made another one of Gina’s breakfast cookies, but it still didn’t taste right!  This was attempt number 2, also attempt number last.  I’m thinking it’s the raw oats that I’m not liking.

Picnic in the park

After church, I met a friend downtown to eat lunch by the water.  It’s a gorgeous day, and also happens to be Ottawa Race Weekend.

I ate this weirdo concoction salad thing made up of old leftovers that are past their due date.  Oh well.

Ottawa Race Weekend is a huge event in Ottawa – almost 40,000 people run in all kinds of races.  There’s a 2K, 5K, 10K, half marathon, full marathon, family races and a wheelchair race over the weekend.  It was neat to be downtown and see all the runners walking around with their medals!

I admit, I suffered from runner’s envy.  They all looked so proud of their accomplishments – as they should!  I guess there’s something about running with thousands of people in a competitive environment that gets runners going.  You know what else was cool?  Every kind of body shape, every age of runner, was out there today.  Talk about inspiring!

I had a few friends run in various distance races.  My roommate’s friend ran the full in under 4 hours!  And she hadn’t been running in 3 weeks due to an injury.  Pretty awesome.

When I got home I grabbed an apple + strawberries the size of an apple + almond butter.

My sweet tooth wanted more so I listened and fed it God’s candy: dates + dried papaya.

And random pickles + carrots have also headed down the hatch this afternoon.

Bake some muffins

I’ve been doing some baking this afternoon for home church.  A friend requested pumpkin cranberry oat muffins so I made those and managed to avoid licking the batter bowl.  There’s a first!  I may not have run a marathon, but that’s a pretty big accomplishment in itself.  But I may have licked the spoon.  Ha!

I’m hoping this recipe isn’t from some copyrighted book and I’ll find myself sued in a short while… I’m posting it anyway.  I like to live on the edge.

Pumpkin Cranberry Oat Muffins

½ c of chopped almonds or pecans or walnuts (for topping)

2 tbsp of brown sugar (for topping)

1 egg

1/2c of milk

14 oz can of pumpkin

1/4c of butter melted (or canola oil… could also replace half of
this with applesauce if you wanted)

1 tsp vanilla

2 1/4c of flour

1 c  of oats

½ c of brown sugar

3 tsp of baking powder

1 ½ tsp of cinnamon

1 tsp of salt

½ tsp of baking soda

1/2 tsp of nutmeg

1 cup of raisins or dried cranberries

Preheat oven to 375. In a small bowl, stir almonds and 2 tablespoons brown sugar.  Set aside as the topping. 
Line muffins tins. In a medium bowl, whisk egg with milk. Whisk in
pumpkin, butter and vanilla. In a large bowl, combine dry ingredients.
Add wet to dry and fold in raisins/craisins.

Bake for 20 minutes, but check after 15… they might be done by then,
depending on your oven.  Don’t over-bake or they’ll be yucky and dry!

I usually get 18 muffins out of this recipe.

This batch is topless.  I didn’t bother with the almond/brown sugar topping – I just sprinkled on a bit of brown sugar, no almonds.  Hopefully they still taste lovey.

Turkey topper

Supper was another mix and match of leftovers.  I managed to squeeze a lot of veggies into one big bowl.

This was about 1/2 c. of rice pasta + jarred tomato sauce + steamed brocc + one small shredded zucc + spinach + chihuahua sized leftover turkey burger.

The turkey topper was a great addition to what would be a standard pasta supper.  It added protein that I definitely needed and some extra flavour.  This was so yum!  And to think, I almost made oatmeal for dinner. ;)

While I had this cooking, I was also baking more muffins for the homeless ministry.  I’m pretty sure I never want to see a muffin ever again.

I thought I’d be able to squeeze in some exercise tonight.  It didn’t happen.  Life got in the way!  Between three rounds of dishes, laundry, cleaning, packing my lunch and answering emails, the day was gone and I’m tired.  Sleep can be just as healthy as exercise when your body is tired.

This was a busy weekend, but a good one.   I feel like I missed a weekend morning or something though because I didn’t get the chance to sleep in.  That’s okay though because I’m going home this week and have 2 days off work!  Lots of sleep is in my future. :)

    I’m glad you got to be downtown yesterday afternoon and participate in the Carnival atmosphere. Ottawa Race Weekend is the best - and the fact that the Great Glebe Garage Sale was on as well… just a great weekend overall!

  3. Race weekends are always so exciting! I would have loved to do the Ottawa Half but I am doing the Toronto Women’s Half this coming weekend and two halfs in two weekends seems a bit much :-)

    What a great looking picnic and a great view too!

    The muffins look amazing! After baking a lot of them I don’t blame you for wanting a break from them haha
