Oats on a Sunday morning?! Who knows the last time I’ve had that luxury! Without the part-time gig at church, I don’t have to leave nearly as early which means… no more Sunday morning breakfast on the run.
An oat-lover with extra time on her hands means one delish bowl to get the day started.
A classic base made with 1/2 c. of oats + half nan + almond milk and topped with raspberries + peanut butter + homemade granola and raisins + cinnamon stirred in.
The raspberries were being a bit wallflowerish today, not feeling much like socializing.
Too bad for them, they all met in my tummy. And too good for me.
Lunch was a big ol’ birthday celebration! It was a joint birthday party for two friends (who happen to be married to each other!) at Casey’s. I am impressed by their menu – it’s changed since the ick food it used to be.
I ordered the Korean beef stir fry and it was pretty good, just a wee bit on the salty side. I ate all the stir fried parts and pretty much all the rice. I might as well just say I ate almost the entire thing. I work up a good appetite on Sundays! Could also have been from all the children I was running after in the classrooms…
It was a baking frenzy this afternoon! Frenzy might be a stretch – frenzy would be baking non-stop for a whole day in preparation for a giant community bake sale or school fundraiser. So with that said, I take that back. It was a baking blitz.
Okay, that just sounds stupid. But I’m going with it.
I did monthly baking duties for Ottawa Innercity Ministries which involved a muffin mix (oh the guilt). Next up was this sweeeet – yet sugarless – recipe for banana-nut cookies. The only change I made to the recipe was adding lots of cinnamon and about 1/4 c. extra oats because three mashed bananas ended up being much more than the 1 and a half cups. To keep it from being too wet, the extra oats were a must.
My helper did the mashing. He’s meant for smashing eggs for egg salad, but works part-time as a nan masher.

Supper was pretty rocking for a salad. I’m a big time salad hater, even though I eat them fairly regularly. This one was good, though.
Mixed greens + red onion + tom + cucumber + tuna + yesterday’s dressing.
And a side of bland corn on the cob. It had a bath in margarine and salt after the photo op.
Dessert was some fruit + melon. I’ve decided to rename the “cookies” to “spongies”. No one in their right mind would call the texture of these cookie-like, so I’m going with banana-nut spongies.
Plus, spongies sounds cute.
Off to get ready for the week ahead… prepping lunch stuff and organizing clothes. …ew.

That little egg-duckie masher is the cutest thing ever. It just made my Monday :). Thank you…because Mondays are rough for me after a good weekend!
