Part of the reason I love Mondays is that they go by really fast. It’s the day most people dread, but before you know it, it’s gone already. Can’t hate that!
Work is on the slow side right now so I guess I’m easing into Christmas holiday mode. Ahh, I do miss the graduate student days of having a month off this time of year.
Oh right, I was home but I was writing furiously to hand in my final research paper.
That I do not miss. Gross.

I Eat
I don’t have any oat pictures for this post. Can you believe that?
On Sunday, I just wasn’t feeling a hot bowl of oatmeal. I had some egginess instead.
A fried egg + bacon on some GF bread. I had a bowl of granola too as I made my actual breakfast.
Today’s breakfast was oatmeal at my desk. I don’t like microwave oats, but, I’m left with no choice if I’m going to workout before work and eat breakfast at the office.
Unless I can sneak a Coleman’s camping stove into my cubicle…
I had a decent but random lunch yesterday.
Okay, I’ll be honest: these parsnip “fries” were awful. I hated them. I wouldn’t feed them to the squirrel in the backyard who dug up my plants all summer and then hissed and spit at me while he sat on our fence. That’s how bad they were.
The open-faced tofu + avocado + sprouts + red onion sandwich was good though!
This was followed by one hundred snacks and a mixed greens salad + huge hummus blob for supper.
Tonight’s supper – way tasty.
Some sauteed kale + red onions + shallots + wormy mushrooms + soy sauce + sea salt.
Steamed purple potatoes.
Is it just me, or does that chicken breast look like an old man’s face?

I only ate up to his eyeball and the rest in on my sandwich for work tomorrow.
My tongue and tummy agree: a tasty Monday night dinner.
I Move
Sunday – I took “day of rest” literally and didn’t work out.
Monday – if there were chickens in my neighbourhood, I would have woken up with them this morning. I was at the gym by 6:15 and did a great 40 minute cardio workout split between the treadie and the bike. On the treadmill, I varied my speeds so that I did 2 minutes jogging and a one minute walking break. My legs are definitely stiffer first thing in the morning so I find running to be more challenging. As if I didn’t already hate it enough.
Off to enjoy the rest of my evening… I think with a good book…
