A Day of Rest

Sunday has lived up to its designation today – it’s been a pretty restful day.  I like those… gets me set for the week ahead.  No exercise today and even a nap!  That’s two for two this weekend.  Guess I’m a Sleep Monster.

Today started with some chocolate naner blueberry oats.  They didn’t taste chocolately though.

1/2 c. oats + half nan + unsweetened choco almond milk + yesterday`s blueberry sauce + way too much pb.  How do I know it was too much?  My mouth was perpetually stuck together while I was trying to eat.  That’s too much nut butter.

A tummy ache is also a good indication of that.  Beh.

I loaded up on groceries after church – woohoo, friends who drove me!  No donkey-on-the-bus this week!  I came home to this little lunch:

Hummus + toms + romaine + alfalfa sprouts  on corn bread with a side of pre-made bean salad.

And dessert was cantaloupe + grapes.  I haven’t had this melon in ages.  It’s good stuff, eh?

I snuck two banana nut spongies from the freezer.  Why do they always remain photoless?  Because I just grab them and pop them in my mouth.  Taking a picture slows down this very speedy process.

I attempted a new recipe for peanut butter granola bars.  It failed miserably so instead, I’m crowning it peanut butter granola blobs.  When stuff flops in the kitchen, it’s a downer.  Good thing supper made it for it… times a million.

Okay, you guessed right, I didn’t actually eat an entire chicken for dinner.  Almost, but not quite.

I bought this little chicken for five bucks a few weeks ago and froze him.  It was an IKEA commercial moment when I looked at the receipt — “start the car!  Start the car!”  Five bucks for a ton of chicky meat. 

Do not be afraid to cook a whole chicken.  I kid you not, it’s one of the easiest things you can make.  It might look intimidating, but if you’ve never tried it, give it a shot.  Easy stuff.

I rinsed the chicken off and put him on top of a bed of onion wedges in a roasting pan.  Then, I rubbed a bit of buttah under his skin and some on top.  I sprinkled him with fresh thyme + salt n pepa.  Then inside his tummy, I put half a lemon (the other half I squeeze on top and threw in pan) and fresh thyme and 3 garlic cloves.  Into the oven at 375 degrees for 40 minutes, and then increased the temperature to 425 degrees for another 40ish minutes. 

The house smelled like chicken heaven.

I roasted potatoes as well, adding oil + thyme + sea salt to these.

The chicken was super moist under all that crispy skin.  I`m not a skin eater but the meat still had a ton of flavour without it, and had a subtle lemony taste, too.

Expect to see lots of chicken leftovers this week. :)

I`m munching some of that granola blob stuff and it`s time to do Sunday night things.  Lunch is packed, work clothes are ironed, so that means… crack a good book.  Have you read any books from The Number 1 Ladies’ Detective Agency series?  I’m hooked!  They read very fast and are great stories.

Bicycles n’ Blueberries

This was part of my Saturday morning so far.  Pretty, eh? 

I woke up at 8, even though I didn’t get to sleep until later.  Booo.  Last night’s party was lots of fun… lots of girls in wedding dresses and bridesmaid gowns (yep), great food and yummy drinks and lots of laughing.  It’s a recipe for a fun Friday night! 

At least there was lots of sunshine coming through the window this morning.  Lots and lots of sunshine.  That’s so rare this summer that I knew I had to take advantage of a beautiful day.  I had planned on doing a class at the gym but the sun was calling my name. :)

First, a snack…

A nan half + almond butter.  Then I geared up and got my bike.  It’s been ages since I went for a real bike ride.  I did a 25km loop and soaked up the gorgeous morning.  It was one of those bike rides where I couldn’t help but think about how thankful I am for everything God has given me… so so so awesome.

My turnaround point is the Ottawa River, and this is where I used to row.

After a shower, I was ready for brunch – I didn’t get a chance to eat until 11:15 so I’m calling that brunch…

I made a blueberry sauce using this recipe.  Instead of sugar, I used Splenda, but everything else I did the same.  I came across this recipe through work files, oddly enough!  It was so tasty!  A great way to use up berries that are getting old.

Now I’m sipping some coconut chai tea and soon, I’m going to walk to the library.  I.  Love.  Saturdays.

Spongies

Oats on a Sunday morning?!  Who knows the last time I’ve had that luxury!  Without the part-time gig at church, I don’t have to leave nearly as early which means… no more Sunday morning breakfast on the run. 

An oat-lover with extra time on her hands means one delish bowl to get the day started.

A classic base made with 1/2 c. of oats + half nan + almond milk and topped with raspberries + peanut butter + homemade granola and raisins + cinnamon stirred in.

The raspberries were being a bit wallflowerish today, not feeling much like socializing.

Too bad for them, they all met in my tummy.  And too good for me.

Lunch was a big ol’ birthday celebration!  It was a joint birthday party for two friends (who happen to be married to each other!) at Casey’s.  I am impressed by their menu – it’s changed since the ick food it used to be.

I ordered the Korean beef stir fry and it was pretty good, just a wee bit on the salty side.  I ate all the stir fried parts and pretty much all the rice.  I might as well just say I ate almost the entire thing.  I work up a good appetite on Sundays!  Could also have been from all the children I was running after in the classrooms…

It was a baking frenzy this afternoon!  Frenzy might be a stretch – frenzy would be baking non-stop for a whole day in preparation for a giant community bake sale or school fundraiser.  So with that said, I take that back.  It was a baking blitz.

Okay, that just sounds stupid.  But I’m going with it.

I did monthly baking duties for Ottawa Innercity Ministries which involved a muffin mix (oh the guilt).  Next up was this sweeeet – yet sugarless – recipe for banana-nut cookies.  The only change I made to the recipe was adding lots of cinnamon and about 1/4 c. extra oats because three mashed bananas ended up being much more than the 1 and a half cups.  To keep it from being too wet, the extra oats were a must.

My helper did the mashing.  He’s meant for smashing eggs for egg salad, but works part-time as a nan masher.

Supper was pretty rocking for a salad.  I’m a big time salad hater, even though I eat them fairly regularly.  This one was good, though.

Dessert was some fruit + melon.  I’ve decided to rename the “cookies” to “spongies”.  No one in their right mind would call the texture of these cookie-like, so I’m going with banana-nut spongies.

Off to get ready for the week ahead… prepping lunch stuff and organizing clothes.  …ew.

Cheap Chicken & Chocolate

Cheap chicken is awesome.  50% off is a steal.  Granted, the best before date was tomorrow.  That’s not really a problem if you cook it today!

It was bone-in, skin-on chicken but that’s okay – I bake the chicken on a convection setting, so it stays super juicy and I just pick off the skin.  No dry chicken is allowed on my plate.  Strictly forbidden.

Also 50% off was edamame salad, best before date today!

Steamed brocc + cauliflower and a side of brown rice made for the rest of supper.

I made some t-mix granola this afternoon, too.

I heated up 1/4 c. honey + 2 tbsp. canola oil + 1 tsp. vanilla extract + lots of cinnamon + 1/4 tsp. salt + a couple blobs of the t-mix cement from the other day.  Once heated, I poured it over 2 c. oats + 1/4 c. pumpkin seeds and baked it at 350 degrees for 10 minutes, stirred it, and baked it for another ten.  Keep an eye on it if you try this… it can burn really quick.

I snacked on a few spoonfuls. :)  Then I had a few more spoonfuls, from a bowl, with unsweetened chocolate almond milk.  Ohhhh myyyy.  Why did it take me so long to try this?!

Bunless Burgs And A Bike

Ooo my turkey burgers turned out excellent!  Yippee!

Before I got into that little kitchen adventure, I had the other half of my red pear with a blobbette of almond butter.

Then it was burg making time.  I checked out a few various recipes and came up with my own to make tasty turkey burgers.  I mixed together:

  • 1 package of extra lean ground turkey
  • 1 small onion, diced
  • 1 beaten egg
  • 2 big spoonfuls of pesto
  • 1/4 c of oats
  • salt
  • pepper
  • love

Kidding, there was no love in those burgers.  None. ;)

I used my handy dandy burger patty squisher gadget to make nice round patties.  It’s definitely going to show up on You Need That? in the future and will surely get a high score.

Anyway… this recipe made 5 people size burgers and 1 chihuahua sized burger.

No wheat-free burger buns in my freezer as of yet, so I settled on a piece of safe bread.  I always thought that putting a burger patty on a piece of bread looked so wrong but you can decide for yourself:

I’m not a chip person at all but these were good.  Really good!  Kettle chips destroy the regular kind.  If that wasn’t enough salt, I ate a bunch of pickles too – and don’t be fooled into thinking the only pickles I ate are the ones in that photo. :)

This dinner was completely satisfying.  It was the best supper I’ve had in a long time, actually.  Maybe it tasted good because it was a real supper with some effort put in?  Those meals always taste better.

Ma bicyclette

My roommate came back from a bike ride and was telling me how nice it was out to go for a ride.  I was feeling stir-crazy from being inside all day and thought some fresh air might help my cold.  Not sure if I compromised physical health for mental health but I needed to get out of the house and move, just a bit.  I hadn’t planned on going very far, but I ended up doing the same 25km route as last weekend.  I took it easy and enjoyed every minute (…except the uphill parts).

I am very ready for bed and ready to go back to work tomorrow.  Yup, I love my job!  I’ve been taking my vitamins and drinking lots of tea so hopefully tomorrow I’m feeling ready for what will likely be a busy day.
