Sunday has lived up to its designation today – it’s been a pretty restful day. I like those… gets me set for the week ahead. No exercise today and even a nap! That’s two for two this weekend. Guess I’m a Sleep Monster.
Today started with some chocolate naner blueberry oats. They didn’t taste chocolately though.
1/2 c. oats + half nan + unsweetened choco almond milk + yesterday`s blueberry sauce + way too much pb. How do I know it was too much? My mouth was perpetually stuck together while I was trying to eat. That’s too much nut butter.
A tummy ache is also a good indication of that. Beh.
I loaded up on groceries after church – woohoo, friends who drove me! No donkey-on-the-bus this week! I came home to this little lunch:
Hummus + toms + romaine + alfalfa sprouts on corn bread with a side of pre-made bean salad.
And dessert was cantaloupe + grapes. I haven’t had this melon in ages. It’s good stuff, eh?
I snuck two banana nut spongies from the freezer. Why do they always remain photoless? Because I just grab them and pop them in my mouth. Taking a picture slows down this very speedy process.
I attempted a new recipe for peanut butter granola bars. It failed miserably so instead, I’m crowning it peanut butter granola blobs. When stuff flops in the kitchen, it’s a downer. Good thing supper made it for it… times a million.

Okay, you guessed right, I didn’t actually eat an entire chicken for dinner. Almost, but not quite.
I bought this little chicken for five bucks a few weeks ago and froze him. It was an IKEA commercial moment when I looked at the receipt — “start the car! Start the car!” Five bucks for a ton of chicky meat.
Do not be afraid to cook a whole chicken. I kid you not, it’s one of the easiest things you can make. It might look intimidating, but if you’ve never tried it, give it a shot. Easy stuff.

I rinsed the chicken off and put him on top of a bed of onion wedges in a roasting pan. Then, I rubbed a bit of buttah under his skin and some on top. I sprinkled him with fresh thyme + salt n pepa. Then inside his tummy, I put half a lemon (the other half I squeeze on top and threw in pan) and fresh thyme and 3 garlic cloves. Into the oven at 375 degrees for 40 minutes, and then increased the temperature to 425 degrees for another 40ish minutes.
The house smelled like chicken heaven.
Friends forever.
I roasted potatoes as well, adding oil + thyme + sea salt to these.
A side of green beans rounded out this supper.
And the angels sang!
The chicken was super moist under all that crispy skin. I`m not a skin eater but the meat still had a ton of flavour without it, and had a subtle lemony taste, too.
Expect to see lots of chicken leftovers this week.
I`m munching some of that granola blob stuff and it`s time to do Sunday night things. Lunch is packed, work clothes are ironed, so that means… crack a good book. Have you read any books from The Number 1 Ladies’ Detective Agency series? I’m hooked! They read very fast and are great stories.
