Ketchup Time

Looks like I haven’t posted all week!  I’ve been too busy doing other fun things. :)  Oddly, I don’t have many pictures, either.  I did a lot of eating on the run and ate out for a couple meals and I didn’t snap any photos.

Time to do some catch up.  Ketchup?

I Eat

Re-toasted weekend waffles are enjoyed immensely on a weekday. :) I had these on Tuesday – yes, Monday was reheated office oats.

I threw trail mix + cinnamon on top and added some almond butter.  Dipped in plain yogurt, I got lost in a land of deliciousness and then realized I should probably actually go to work.

On Wednesday, I had some scrambled egg whites + various veggies and a side of GF brown toast + blueberry honey.

No no, I didn’t eat the whole jar.  I wanted to, though.  It doesn’t taste strongly of blueberries, it just has a really subtle hint of them.  I forgot how good simple toast and honey with a cup of tea can taste.  Thank you Santa for more farmer’s market honey!

I want to be an old grandma one day who only eats honey toast + tea. 

Thursday I ate an egg sandwich on the bus.  I do not recommend this.  I had work-related stuff to go to in Gatineau (Quebec) and it was a long commute.  I had to leave too early to make something decent.  Bleh.

This morning, more office oats.  It’s sad.

Lunches?  Packed.  Pretty standard fare.  Lots of vegetables, a couple sandwiches, some leftovers.

Dinners were more interesting.

I reheated some GF, dairy free mac + “cheese” in the oven and added a side of steamed beets.  The mac wasn’t bad, considering it’s been in the freezer for… a couple months.

Someone, please, help.  I don’t like beets and I think it’s because I have no good recipes for them.  If my Farmer Friend shows up with more beets in my next delivery basket, I’ll save them to throw at the squirrels in the summer, rather than eat them.  Anyone have an easy recipe idea?

The Swiss Chalet delivery man!  Too tired to cook, too tired to do anything but put in an order for a quarter chicken dinner + mashed taters.  My tum felt a bit weird after this – maybe there was wheat in the taters?  I added my own side of mixed veggies.

Maybe I’m just really cheap, but I find it hard to believe that I should have to pay over 12 dollars for a chicken breast and a mashed potato blob. 

And yet, it tasted great, and there’s no arguing that.

When you come home late and don’t know what to eat (and you already ordered Swiss Chalet the night before), coming up with something decent is hard.  I just didn’t bother trying.

Supper was steamed sweet potato + quinoa (with touch of sesame oil) + edamame.  At least I know it had a lot of protein, thanks to the grain and the awesome green guys.

Thursday night I went for Vietnamese and it hit the spot!  Yum.

Tonight, I met up with Martha and my Everyday Food magazine to make this:

A Quick Chickpea Curry.  Martha Stewart can be a scary lady, so I won’t post her recipe on here, but if you browse her food website in the near future, you might find it someday soon!

I piled it on top of basmati rice and topped it with cilantro + plain yogurt.

I Move

Okay, let’s see if I can remember…

Mondaystrength training at the gym, mostly biceps + core.  I warmed up with 10 minutes on the treadmill to break a sweat.  I haven’t done bicep curls in ages and my arms felt great after.

Tuesday – pretty much a rest day, but I did squeeze in a half hour walk back from the office.

Wednesdayhot yoga.  Very, very hot.  Hotter than usual, I think.  Regardless, sweating out the last three days of work felt good.

Thursday – a true rest day.

Friday – back to the gym before work for some treadmill time.  About 40 minutes, a mix of walking and running, to start the day.  For about the first twenty minutes of cardio I feel sluggish and sore, but then all of a sudden, my body gets into it and I have no problems.  That first part is always the hardest.

I have a great weekend ahead, and hope you do too!  Enjoy it, whatever you’re doing, and whoever you’re spending it with.

Roots For Soup

I’m sad to report that I only have one oatmeal picture to post.  Eating breakfast at the office isn’t conducive to nice photographs.  Or maybe even permitted photographs… hmmm…

I did step up my game though!  I used to make a few servings of steel cut oats in the evening, put them in separate containers in the fridge, and then add a bit of water to them at work, heat and eat.  A few of you reminded me of this possibility (my brain is not functioning post-Christmas) so that’s what I’ve done this week.  Steel cut oats are a nice change for gooey, rubbery office oatmeal.

Breakfast was enjoyed at my kitchen table yesterday, Scottish oatmeal style.

Topped with unsweetened snow + slivered almonds + cranberry mix + pumpkin seeds + almond butter.

I’ve had a few tasty dinners lately.

This was champagne chicken pasta leftovers that I added kale + weird looking mushrooms to before it went to my tummy.

This poor quality pic is of a random dinner I threw together while rummaging through my fridge, feeling totally uninspired and about three seconds away from calling Swiss Chalet.

The picture does it no justice.  This supper was awesome!

I sauteed onion + celery until it got soft, added in some tomato + corn and a can of salmon.  I seasoned it with some mixed salmon seasoning, threw it on basmati rice and declared victory over uninspired moments in the kitchen.

Tonight supper was another winner winner (no chicken dinner!).

I needed to use up some of the root veggies I have lying around from the farm delivery.  The best way to do that is by making soup, of course.

So here’s what you do if you find yourself with an abundance of vegetables that are soup-worthy:

  • Sautee 2 small chopped yellow onions and 2 chopped celery stalks in some EVOO and let them soften, about 8 minutes
  • Add one box (or two small cans) of chicken broth, a couple cups of water, and six or 7 cups of chopped vegetables
    • I used parsnips + carrots + sweet potato + new potatoes + odd white things that remain a mystery
  • Bring it to a bowl, then reduce the heat and let it all get mushy – that takes about 25 minutes
  • Mash it with a potato masher, or use a hand blender to make it smooth, if you prefer
  • If you love fall flavours, add cinnamon + ground nutmeg + ground cloves to taste.  I just eyeballed it and gave it a few tastes.
  • Add salt + pepper to taste

This was easy, yummy and makes tons of leftovers.

Enjoyed with a side of GF brown bread + Laughing Cow cheese, all placed improperly on a placement, because that’s how I keep it real…

I Move

Monday – hello Monday, hello early gym time.  I was at the gym before work to do some cardio split between the bike and the elliptical.  It was pretty dull.  I finished up with a couple minuts of abs and called it a work out.

Tuesdayhot yoga night.  The NYE resolution folks are out in full force, which meant there were probably 15 extra bodies in the room, which left everyone doing an awkward mat shuffle before class started.  That cut into my pre-class nap.  It was a great workout though, with a couple new poses thrown in.

Wednesday – back to see Jim this morning for about 40 minutes on the treadmill.  At yoga last night during dancer’s pose, the teacher said “have fun with this, don’t take yourself so seriously, and that can help”.  I remembered that on the treadmill this morning and it made running feel (somewhat) easier.  Nothing too strenuous today.

Tomorrow is surely a rest day.  I think I’ve finally got my workout routine sorted out.

I think it’s tea time!

It’s no secret – I love breakfast.  I was looking at my food pics from the last couple of days and it’s hard to tell what I actually ate at breakfast time.

Maybe Bob’s funny little face has something to do with my breakfast love?

dec22 007 The funny thing about Mr. Bob Red Mill is that when I worked as a gardener, my boss looked exactly like this guy.  And his name was Bob.  Just replace the blue cap with a hard hat and get rid of the umm, star medallion necklace, and it’s his twin.

 

I Eat

I forgot about this bag of Scottish Oatmeal in the cupboard until I started digging around in there.

More eggs for dinner tonight (even though I had two at breakfast – among other delicious eats - for our Christmas work “party”) but just egg whites instead of the real deal.

That’s an omelette folded in half with yellow peppers and a tiny bit of light cheddar.  The orange filled the sweet quota and the little bit of bacon gave me some salty yum.

I’ve been trying to eat more protein lately so I had this snack as a way to squeeze in some more satisfying eats:

Fat-free cottage cheese + agave syrup + cinnamon and some apple slices for dipping.

Mediocre sushi was last night’s supper.  Meh.  And of course, other eats have been enjoyed in El Cubicleo.

I Move

Sunday – beautiful, beautiful rest day.  I did get in some good walking downtown to check out the Christmas lights with a friend.  They light up the Parliament buildings and shine huge snowflakes on the front, so it’s pretty to see.

Monday – at the gym by 6:15 and had a fantastic treadie run.  When I’m feeling lazy when I get there, I remind myself that I just dragged myself out of bed in the dark, braved the –25 temperature at the bus stop and spent time organizing all my gear the night before… so I have to make it worth it.  It was a great work out.

Tuesday – another good sweat session, this time at the yoga studio.  I can tell I’m improving at the different postures!  And tonight, when I was in cobra pose, the teacher came over and stood on my feet.  It was like an in-class foot massage!  Except sweatier… ew… okay, but it was an awesome class.

Oh!  Guess what?…

I’m on Christmas holidays!

I’m headed home tomorrow morning so my next post will be from my cozy house, while I’m parked beside the fireplace, tea in hand.  I love going home for Christmas.

Popped Corn

You know it’s been cold out when –12 C feels warm.  Eeek.  It’s been around –30 C with the wind chill (that’s -22 F) the last couple of days.

I will not complain.  I will not complain.  I will not complain…

I Eat

I have no pretty oat pictures, again.  More breakfasts at my desk!  I’ve been microwaving 1/2 c. oats + water + toppings after my workout.  My pre-gym snack is always 1/2 nan + nut butter.

Today was a Saturday breakfast.  Saturday breakfasts are among my favourite things in life – just behind my bed.  As a working gal, I love them way more than I ever did in school.

Some Bob’s Red Mill GF pancakes.  I topped them with flax seeds + coconut + sliced almonds and dipped them in hidden plain yogurt + pure maple syrup.

Backing up to Tuesday, I had a decent breakfast before work.  On Tuesdays, yoga is in the evening so I can eat at home in the morning.

An egg white omelette with shoots + red onion + mushroom + Italian seasoning and on the side, GF toasts + grapefruit.

Suppers have been pretty ordinary.

Roasted acorn squash + tofu + kale + brown rice + raisins.

This was all seasoned with olive oil + cinnamon + pumpkin pie spice.  The kitchen smelled like Thanksgiving after this.

I had some delicious Vietnamese with a friend on Wednesday.  Yummy.

I used this recipe to make caramel corn but decreased the butter to 1/2 cup and used manuka honey instead of corn syrup.  I added cranberries + sliced almonds to make this Christmas-ey.

After a couple hours, a very sticky kitchen and popcorn in my hair, I had it all packaged.

I did manage a real dinner tonight, but it was kind of blah.  Just a mix of roasted veggies + tofu + basmati rice.  I seasoned it with olive oil + red wine vinegar + thyme + s n’ p.

Dessert more than made up for a lacklustre dinner!  I microwaved a chopped apple for about a minute and topped it with plain yogurt + granola + raisins.

Tummy, Untamed

Lately, I’ve been eating a lot.  I couldn’t figure out why I’ve been so snacky – and I mean, really, really snacky – and then I realized it must be from working out more often.  And the weather.  When it gets cold, I want to curl up on the couch with a big bowl of _____ and mange, mange, mange.  Time to pull in the reigns again!  And eat more protein during the day.  That always helps too, especially if I’ve worked out earlier that morning.

Tuesday – sweated out the day in hot yoga.  Lovely.

Wednesday – early morning with Jim.  Just a treadie day.

Thursday – back to the gym first thing to do twenty minutes of cardio split between the bike and the stair master.  Okay, I confess: I can’t figure out the stair master.  It never feels natural.  Can anyone else relate to that?!  Anyway, I did about 10 minutes of weights before I realized I needed to get ready for work.

Friday – ugggh, and one last morning at the gym.  Forty minutes of cardio split between the bike and the treadie.  

Saturday – after the snacky day, I was craving a good sweat session.  I went to the gym I haven’t been to in awhile and did the hour of power split between the treadie and the elliptical.

The White Stuff Arrived

My weekend to-do list is ginormous.  So much to do, so little time.

Instead, I shall procrastinate with blogging.  Reading other blogs.  Thinking of blog ideas. 

We were hit with a big snow storm on Wednesday and got all this snow in one big dumping…

dec12 040From green grass to 20 centimetres, I think.  It’s here to stay.  I could complain about it like I usually do, but no, this is my year to embrace winter and start loving the snow.

Bah humbug.

I Eat

Hardly any oat breakfasts to show you – I’ll explain why in the I Move section.

Nothing new here.  Just 1/2 c. oats + 1/2 c. water + 1/2 c. almond milk + 1/2 nan + cinnamon + pom seeds + slivered almonds + pumpkin seeds + unsweetened coconut + peanut butter.

Lots of oat bran.  There was 1 + 1/2 c. liquid mixed in, but other than that, same as the oatmeal.

It was topped with pom seeds + t-mix + lots of peanut butter.

Rice spaghetti + Mom’s spaghetti sauce.  I love pulling stuff out of the freezer and not having to think about cooking after work.  It may be ugly, but my stomach didn’t care.

Not to mention, this guy on my bowl seemed to approve of my sad looking supper.

A 24-year old working professional should probably not find as much enjoyment as I do eating from a bowl with puppy heads on it. 

Part of the reason for digging out the spaghetti sauce is: it’s time to eat through the freezer.  Every so often, I decide the freezer is too full of frozen portions of pre-cooked food (and I have the equivalent of 10 chickens’ worth of chicken breasts in there) and I need to start eating it.  Hopefully I get through a bunch of it before I head home for Christmas.

In other news, my exciting organic food delivery arrived on Thursday!  It was pushed back a day because of the storm.  Such delicious food allows me to eat things like this:

I have a fridge full of vegetables I’m a bit scared of and not too sure what to do with, but therein lies the challenge.  You will be seeing beets on the blog.  I’ve never really had beets before…

I Move

Wednesday – just didn’t feel like exercising.  I exercised my vocal chords instead by going for coffee with a friend and blabbing about life.  I had all the time in the world to work out because the snow made for a short work day, but I just didn’t want to.  Instead of  a full work out, I did a some plank exercises at home in front of the TV.  Sad to say, I even had my gym stuff at work… which lead me to…

Thursday – …getting up at 5:30 to hit the gym before work.  This was an experiment.  I didn’t know if logistically this schedule would get me to work on time.  I told my boss about my new early morning endeavour just in case, but I managed to make it to my desk before 8.  Excellent.  I’m a morning person and have always preferred exercising in the morning.  There’s something rewarding about getting to the office knowing my work out is already done.  I don’t have to think about it at 3 o’clock when I’m sleepy and ready to go home.  I did 40 minutes of cardio split between the treadie and the bike.  This schedule also means I’m eating microwaved oats at my desk.  I eat 1/2 a nan + pb before the gym and then have a real breakfast afterward.

Friday – A repeat of Thursday, up in the darkness and off to the gym.  I did 20 minutes of cardio split between the elliptical and the bike and then did lower body strength training for another 20 minutes.  My legs are feeling it today.  Oh!  And I discovered the joy of the skipping rope.  Now that’s a way to get your heart rate up.  I was the only person there at the start of my work out – creepy – but eventually a couple other people showed up.  Hopefully I can keep this schedule going!

Saturday – this afternoon, I’m going to hot yoga.  I missed it on Tuesday so I’m ready for a good stretch in a hot room, especially since it’s –16C right now with the windchill.  Nasty.

Oh… right… my dirty clothes are calling me.  Time to start some laundry.
